VEGETABLE  SOUP- Tatonkamama

 

1 Can tomatoes (chopped)
1# Stew meat
Small head of Cabbage
Onions (Chopped)
Celery (Chopped
Carrots (Chopped)
Brown down Stew meat in a big pot-Cover with water add all veggies and slow cook till all tender Salt and Pepper and Garlic to taste.  We call this Hunter  Soup. I don't use Potatoes dad gummed if I know why but they seem to cook to mush and we just don't care for them in this soup! This is one of those better the next day type soups and the more it goes to looking like just slop...the better the flavor.  I've never tried it in Crock-pot but If i did I would cook beef till tender first then you could mix it all and forget it I guess...let it cook all day if you wanted too...
Some people like to throw in a Bay leaf I go either way with Bay leaf

 

Potato-Onion Soup  By-Twinjj

1/4 tsp cumin seeds or powder
1/4 tsp caraway seeds
5 green onions chopped
1 tbsp butter
2 cans chicken broth
1/2 cup  heavy cream
3 med. potatoes (cubed)
1 pkg Polska Kielbasa cut into small chunks
3/4 cup sliced spinach leaves
3/4 cup cabbage cut in long thin strips
Salt and Pepper

In a skillet,  melt butter and add seeds, stir for about a  minute. Add
Kielbasa and green onions and sauté.  Place cubed potatoes in a large
soup pot with 1 tsp salt. Cover potatoes with water (just enough to
cover) Bring to boil then simmer 8-10 min. till potatoes are just tender. Do
not overcook. Add kielbasa to potatoes. Add broth, heavy cream and 1/2
tsp black pepper.  Then drop the shredded cabbage and spinach just on
the top of the soup. Simmer 15 min or till cabbage is tender.  Season to
taste with salt and pepper.
This is my entire family's favorite soup. I have served to many guests
and never found anyone that did not thoroughly enjoy it. It is
wonderful served up with a light salad and corn bread fritters.
 Loaded Potato Soup - Twinjj (another of my creations)

5 med potatoes cut into chunks
5 green onions chopped
Grated Mixed Cheese (I like the Mexican blend)
1 can chicken broth
1 lb bacon cooked crisp and crumbled
3-4 tbsp flour
5 tbsp butter
1/2 cup heavy cream
4 oz chunked Velveeta cheese
1 tsp white pepper

In a boiler, cover potatoes with water and bring to a boil. Reduce heat
and simmer 10 min. until slightly tender. Drain

Melt butter until hot. Add flour and stir until smooth to make a light
roux. When thickened, add the chicken broth and heavy cream. Add
Velveeta chunks. Stir until cheese is melted and soup is creamy. Add potatoes
and white pepper. If soup is too thick add some water or chicken broth,
but not much as this is a thick soup. Season to taste with salt and
pepper
Serve in individual bowls, topping each with, green onions, bacon, and
grated cheese.
"CHEATER" BEAN SOUP-  Tatonkamama

 

1 can Bush plain white Great Northern beans
1 Can Veg-All with broth
3 slices Bacon Cut up like for Scrambled Eggs I usually put in some cut up Onion too
brown and drain the bacon well
add to Soup mix and simmer a bit
I like this because it doesn't make so much (But you could double or triple if you like it)
Salt and Pepper to taste

 

1 bag of good pitted Prunes
1 bag of good mixed  Dried Fruit (Apricots, peaches, pears etc)
cup of Raisins
2 Apples (peeled and diced up)
1/2 cup Sugar (Optional)
Juice of One fresh Lemon
Cover with water and cook till all tender (watch-you may have to add water so it doesn't scorch)
add 4 tablespoons of Minute Tapioca and  stir and simmer till thickened
Serve warm (Try it with a little cream poured on)
This keeps well in refrigerator
Sometimes the water cooks all of and sometimes it doesn't !!!  *****

 

BAKED PAPAYA WITH CINNAMON-Sec

 

1 ripe papaya (about 1 pound)

1 teaspoon margarine, melted, or

1 teaspoon almond or walnut oil

2 teaspoons brown sugar

1/8 teaspoon ground cinnamon

 

Preheat the oven to 350 degrees F. Cut the papaya in half lengthwise; scoop out and discard the seeds. Place the halves cut side up in a shallow baking dish. Brush the top with margarine or oil. Sprinkle sugar and cinnamon over the papaya. Bake 15 to 20 minutes, or until heated through. Serve warm or at room temperature.

 

Potato Boats-Lynn Gordon

Makes 2 boats

1 large potato

2 Tablespoons chopped onions (the frozen kind work great for this)

1/3 c grated cheddar cheese (You can buy this already shredded in the dairy case)

1/4 cup milk

1 tablespoon butter

1 teaspoon taco sauce

Wash the potato, prick it with a fork several times and microwave on high for 5 minutes.

 

When potato is cool enough to handle, have your adult helper cut it in half.  Use a spoon to scoop out most of the inside of the potato into a mixing bowl  Be careful not to break the potato skin.

 

Add the milk, butter, cheese, onion and taco sauce to the bowl and mix it up really well.

 

Refill the potato shells and microwave on high for 3 minutes.

 

What a way to get kids to eat their veggies!!!

 

 


 2- 8ounce cream cheese
1 small can mandarin oranges
1 small can crushed pineapple
1 small box instant vanilla pudding mix
1/2 cup chopped pecans

Drain oranges and pineapple real well
mix all ingredients together
Make into a ball and roll in coconut
Refrigerate
Serve with graham crackers
Good at holidays or parties

 

Pineapple Cheese Ball-Sec

  2-8ounce cream cheese
  1 small can crushed pineapple (well drained)
  1 cup chopped pecans
  1/4 cup chopped green pepper
  2 T chopped onion
  1 T seasoning salt
 
Mix all together and for 1 large ball
or 2 small balls

Roll in pecans and refrigerate

serve with assorted crackers
FARM TOMATO SOUP- Tatonkamama

 

Large can Tomatoes (Save the can for measuring!)
Onions and celery chopped (to your taste)
Cook tomatoes with celery and onions till they are tender and done. Salt-pepper and garlic....
Separate pan Fill the tomato can with milk (So you have equal measure) pour in pan and add good dollop of butter -Heat till almost to a boil. Put a tiny bit of baking soda in tomato mix it will foam up and cut the acid in tomato and keep milk from curdling...Mix the two together and serve and oldie but a goody!!! Ya! You can add Cooked Rice or Cooked Mac...but your cheating!! LOL
