1/2 cup sugar
1/3 cup red swine
vinegar
2 tbsp lemon juice
2 tbsp finely chopped
onion (optional)
1/2 tsp salt
1 cup shredded Swiss
cheese
2 medium apples, cubed
2 medium pears, cubed
1/4 cup dried
cranberries
1/2 to 1 cup chopped
cashews
In a blender or food
processor, combine the sugar, vinegar, lemon juice,
onion, and salt. Cover and process until blended.
In a salad bowl, combine
Swiss cheese, apples, pears, cranberries, and
cashews. Serve immediately or can be refrigerated
overnight.
This is also delicious
served over lettuce!!
