GINGER SNAPS

MACADAMIA  MACAROONS

SPECIAL "K" BARS

 

MACADAMIA  MACAROONS-twinj

2 1/2 Cups Shredded Coconut
1 Cup Unsalted Macadamia Nuts, Chopped
1 Cup Sweetened Condensed Milk
1 Teaspoon Vanilla
20 Premium Crackers, finely crushed
2 Egg Whites
Vegetable Oil or Cooking Spray
6 OZ. Semisweet Chocolate Chips, Melted

Place coconut and nuts on a 15 l/2 x 10 1/2 x 1 inch baking pan. Bake 
at 350 deg. Until lightly toasted, about 10 min., stirring frequently. 
Cool.
In a large bowl combine milk and vanilla. Stir in coconut mixture and 
crushed crackers. Blend well. Beat egg whites until stiff, then gently 
fold into coconut mixture. Drop by rounded teaspoon onto 
lightly-greased-baking sheet.	

Bake at 350 deg. For 12 to 14 min. or until golden around edges. Cool 
completely. When cool, dip bottoms into melted chocolate and place on 
waxed paper. Refrigerate until set.

 

GINGER SNAPS -tatonkamama -- another of our favorite recipes --very old recipe and soooooogoood!!

 

3/4 cup shortening and I mean like Crisco solid!
1 Cup Sugar
1/4 Cup Light Molasses
1 Beaten Egg
2 Cups Flour
1/4 teaspoon Salt
2 teaspoons Soda
1 teaspoon Cinnamon
1 teaspoon ground Cloves
1 teaspoon ground Ginger
Cream the shortening and the sugar, add molasses and Egg
add dry ingredients and mix well.
Roll in small balls (little smaller than Ping-pong balls)
Roll gently in a little bowl of white reg. sugar
Space 2" apart on greased Cookie sheet
Bake at 350* 15 minutes (makes 4 dozen) I double the recipe...........

 

SPECIAL "K" BARS-Tatonkamama

 

I use any unsweetened dry cereal I have extra on hand.

1 Cup Sugar

1 Cup White or Brown "Karo" syrup

1/4 Cup Butter or Oleo

1 Cup Peanut butter

6 Cups Dry (Un-sweetened) Cereal

Chopped nuts (Optional)

 

Boil-Sugar, Syrup and Butter

Add: Peanut butter

Pour over Dry Cereal and nuts (If desired)

Mix well and pat down in greased 9" by 13" cake pan.. 

I use the back of a buttered big spoon to do this..

Pat down well

If you want you can mix up a little of your favorite Chocolate frosting 

to spread on the top when these are really cool...To me, it's a bit much!!!!!
